How to temper chocolate
How to temper chocolate
An good way to temper chocolate is in heat resistant glass in an oven at about 150-170 degrees. Just chop the chocolate and put into the glass bowl and put into the oven. Stir with a wooden spoon on occassion until all the crystals are dissolved and the chocolate is smooth. Remove from the oven and cool to the appropriate 85-88 degrees, you can test this with a dairy thermometer, and then use to dip premade centers. The benefit of tempering chocolate in the oven is that you cannot accidentally incorporate water into the chocolate, which is easy to do with a double boiler. If water gets into your chocolate it will change the crystal structure on hardening and the chocolate will ‘bloom’ which means white spots and streaks will appear. These cause the chocolate not to look as good, and makes the texture more chalky.
If your chocolates develop ‘feet’ when they are put onto a drying surface, it means the chocolate is sluffing off the center and pooling around it, then the chocolate is still too warm. Particularly when dipping truffles or very soft centers you need to make sure your chocolate is cool enough or it will start melting the center instead of coating it.

Soft boiled eggs
My favorite way of preparing eggs is to fry them over medium. But sometimes, I like to switch it up a bit and boiling them in their shell until soft is my favorite way to do that. It’s faster than boiling them hard, and (since I don’t much like solid yolks) it’s tastier. Here’s how I do it.
This recipe assumes the eggs have been refrigerated and have just been removed from the refrigerator before beginning.
Boiling eggs in the shell pretty much starts the same way – by bringing water to a boil. The amount of water is variable depending on the size of pot and the number of eggs being boiled. An easy way to determine how much water is needed is by placing the eggs into the pot selected and pouring water in until there is at least 1 inch (more than 2 cm) of water covering the eggs.
You really need only about 1/2-in. (more than a cm) of water above the eggs for this to work well, but I find that some amount of water will escape as vapor while it is boiling and waiting for eggs to be deposited. Depending on how often you check on the pot, water loss can be substantial, so try to make sure you have at least an inch of water over the eggs before you start.
Remove the eggs from the water and place the pot (with its lid on) onto the burner on medium-high to bring to a boil. The water is ready once it reaches a rolling boil (large bubbles rising cause the surface of the water to tumble and roll).

Some recommendations:
Mundial is a good lower cost professional knife set. If you don’t have the money for the higher quality knives, Mundial knives are a great option for durability and usability.
Forschner (Victorinox) is even lower in cost. The knives are stamped but serve extremely well under abuse and are low cost enough to replace in the future. This is a favorite in many food service industries.
Shun These are probably my favorite knives so far. The quality, sharpness, and look of the knives are amazing. Great if you are right handed – not so great for lefties. Their sets are pretty good, but you’ll have to consider if you need every knife in the set or you are better off piecing your personal set together over time.
J.A. Henckels is the high end line of Heckels knives available. There is also a Henckels International line which for the cost conscious. Keep in mind the Henckels International line is not the same quality as the J.A. Henckels knives. (Note: These knifes are composed of multiple types of metals and not traditional forged. Some believe it weakens the knife, some say it makes the knives better. I can’t tell the difference, but I will say that the Four Star handles fit my hand better than any other knife line so that is why my main knife is a Four Star 8-Inch Chef’s Knife.
Wusthof is a line very close in quality to Henckels. Some say they are better, some say they are worse. In my opinion, I would rate both the same quality level. These knives are traditional forged from a single piece of steel (which is what sets them apart from Henckels). Take your pick (or buy Shun). Source:www.dudool.com

If not, and you are still engaged, a necklace would be a thoughtful 1 year engagement anniversary gift. Pearls or a simple gold and diamond pendant would work well since then she could wear it for the wedding. (My husband bought the necklace I wore for our wedding as a pre-wedding gift, nothing fancy but a simple gold heart with a little diamond, it’s still my favorite.)

OK folks, I’m about to give up so thought I would try here. I saw a ring on Ebay that I know my wife would love. The problem is, after some back and forths with the seller, I was just not comfortable dealing with her and she also tried to jack up the price. First, apply the skin protectant to your own hairline. Pin all of the hair back into a ponytail or bun. Any remaining hair near the hairline or layered hair should be pinned back with clips.

Take a Q-tip dipped in rubbing alcohol and carefully rub over the glue. For minor glue spots, this should loosen up the bond and be able to be easily removed. Once your hairline is dry, you can apply a pressed powder to reduce glue shine.

Hey everyone,
Well As i think I’m one of only 2 May brides on the forum I thought I should post an update.
Getting married in 18 sleeps/ 19th May!
I’m SOO excited. I just can’t wait.
There is actually a bit to do still, pretty much just paying everyone the $ and confirming all orders via email. Have a final dress fitting on Thursday and I absolutely love it.
Just lots of organising… however… 1 month out for D day and I find that friends/fmaily starts to get a bit crazy. I thought i was turning into a bridezilla, but i was just starting to get some really weird requests. If one more persons asks who they’re sitting next to I will tell them they are sitting outside on their own!
I’m just trying to enjoy still being the b2b as i’ts all going to be over soon. So i’m talling pretty much everyone I meet " i’m getting married in X sleeps yay!" Also I hope it doesn’t rain….
How is everyone else going? Or any last minute tips for me?

Finding the best wedding gown styles for your figure can be a challenge if you are a petite bride or tall bride. The following suggested wedding dress styles will get you started finding the perfect dress for your wedding.
Petite Short Bride
The challenge is to add height or length to your silhouette. Look for dresses that have vertical lines.
A-line wedding gowns and Princess wedding gowns are good choices if you “keep the flare moderate.” The addition of princess seaming add length to the body.
The empire waist wedding dress can give length in the torso. But be careful. If you have a prominent bust or very small busted, the empire waist style wedding gown direct the focus of attention to the bust area.
Sheath style wedding dresses and mermaid wedding dress styles are choices you can consider also.
Be careful though of the mermaid style. If you are a petite bride, this is not an easy style to wear. This style is better for a figure that is 57 to 59. Plus for most petite brides the flare might not start on your figure in the right place.
Also, when a significant amount has to be cut off of the hem of a mermaid wedding dress style, you are cutting off a lot of the fullness in the flare, which may or may not be a good thing.
So if you want to wear this popular style and you are petite what can you do? First wear the highest heeled shoe you can manage. Try on different mermaid style wedding gowns. Note where the flare starts and how much hem will need to come off.
I have seen this style work on some petite brides but the trick is to make sure the flare is minimal and start at your knee.
What about a ball gown? Experts say you should avoid this style. But if you must try it, get a style isn’t very poufy in the skirt. Full poufy ball gown wedding gowns have a tendency to shorten the figure.
Also, avoid very long trains because this overwhelms your figure type and can make you look shorter.
Tall Bride Slender Body Shape
As has been mentioned before, most of the designers design their gowns to fit a bride that is 5’9" tall. Most wedding gown styles look flattering on you.
But if you are concerned about not looking to tall or slender, there are a few guidelines I want to pass on to you.
Create width in the details on the dress. Some horizontal ruching, deep tucks and gathering, in the bodice can add width.
Very full skirts like ball gown, a line gowns and princess line gowns can shorten your appearance.
Especially when the silhouette almost appears wide in proportions to your height, makes you look shorter.
Wedding gown styles with a basque waist—-waist that forms a V-point at waist front—- and an off the shoulder neckline pared with a wide skirt has a shortening affect. Tiers of ruffles or layers in the skirt will shorten you.
The bottom line: These are just a few fashion guidelines to get you started when you are ready to shop for wedding gown styles that will compliment your figure.
Sometimes though…. what normally is mentioned as a style that will not look good on a particular figure type, just might work for you. It just depends on how all of the design elements of the gown work together. So you don’t have to rule out completely any style, try on different styles of gowns to see what you like.

Very few wedding dress designers have a bustle built in the dress, so you will have to have your wedding dress alterations specialist add a bustle to your gown.
A bustle makes it convenient for you to walk around and dance without the train getting in your way.
It is held up on the skirt of your train by sets of hooks and loops or buttons and loops. One bustle style uses sets of ties or a set of ties and loops to hold the train up.

Do I Need A Bustle For My Wedding Gown?
If you have a chapel length train or longer you may want a bustle. As mentioned before you will be able to keep you hands free for the reception. You especially need one if you will be walking around and dancing in your gown for hours at the reception.
You don’t need a bustle if you have a short sweep train. You also may not want a bustle if you only will wear your dress for a short time. Otherwise, it is worth the cost to have one added to your dress for the convenience of it.
What Are The Types Of Bustles I Can Choose From?
There are three basic wedding dress bustle styles that are popular now:
American Bustle – This style is also often called the “outer bustle” because your train is hooked up on the outside of the dress. To do this there are buttons or hooks placed on the outside of your gown with corresponding loops.
French Bustle – This style is also called an “under bustle” or European bustle." This bustle has ties sewn underneath the skirt and train to lift the gown. Once you tie up the ties, the outside forms a flap or a series of flaps for multiple tie sets..
Ballroom Bustle – This wedding dress bustle style is sometimes called a "flip under or “flip up” bustle. With this type of bustle the train flips up under the dress and buttons are sewn to the skirt and loops are sewn to the hem of the train to button up. Once bustled, this train looks like a floor length dress all the way around.
How Do I Choose The Best Bustle For My Dress?
Most of the time you will be shown either the American bustle or the French bustle. Have the seamstress show you both. With help from the sewing professional you will be able to tell which one looks best with your dress.
Most of the time one bustle style will look better than another. But in some cases each style bustle looks equally as good. In this case it is just a matter of which one you like the best.
But when it comes to the ballroom bustle this one is used less often than the American and French wedding dress bustle styles. Why?
Well… a lot of seamstresses are not familiar with doing a ballroom bustle. However, for certain style wedding dresses this is the best wedding dress bustle style to use. Another reason is that this is the most expensive bustle type because you usually need at least 11 or more button sets to hold the train up.
So you will be the judge, together with the seamstress as to which bustle looks best and falls within your budget.
When Should I Put My Wedding Dress Bustle Up?
This again depends on what you want to do. Some brides put their wedding gown bustle up before they walk into the reception. Others wait a while into the reception time and then before the first dance have it put up.
Whether you decide to wait to put it up during the reception will depend on how easy it is to hook your bustle up. If it is easy… then you can wait and hook it up during the reception. If it is the American bustle this could be done in front of the guest without exposing the under part of your bridal dress.
But if you have a French bustle or a Ballroom bustle… because the train of your dress will have to be lifted above your waist to tie it or button it up, you will need to have this done out of the sight of your guests. That is why most brides with these types of bustles often do so before they go into the reception. Otherwise, you would have to leave your reception to have the bustle put up.

The mature bride is looking for something carefree. The best “fuss free” wedding dress fabrics are those that have a soft hand and will not wrinkle easily.
Wrinkles in a gown show up prominently in wedding pictures. I don’t have to tell you how much that detracts from a bride.
Bridal fabrics such as satin, chiffon, georgette, crepes, crepe back satins, poly silk blends and any soft draping fabrics will be best. You will be wrinkle free if you choose one of these fabrics in a polyester fiber.
For the mature bride natural fibers such as silks, linens and cottons may be more comfortable to wear because they allow air to circulate. This is important if you are warm-natured.
The only thing about wearing natural fiber fabrics is that they wrinkle very easily. I have though come across silks that resist wrinkling. Higher grade silks do not wrinkle very much.
That’s why you will want a “natural fiber and a blend of polyester” together to lessen the wrinkle factor. The fabric will still be somewhat breathable. And although it won’t eliminate all wrinkles, it will at least lessen them.

Mature brides over 50 and 60 want modest wedding dresses with higher necklines and that have sleeves.
Some older brides who want a sassy, sensual look, feel that off the shoulder wedding dresses are more age appropriate than strapless wedding dresses.
Make sure your bridal dress is slightly loose in areas you don’t want to call attention to like a thick waist, protruding tummy or if you are pear shaped your hips and/or thighs.
These styles have worked out well for many mature brides. Try on a few to see which one will look best on you and suit your personal style.
